Now that the weather is warmer, it’s time to start planning more spring like recipes. No more soups and stews. This is the season for fresh veggies and outdoor barbecues! Check out these delicious and easy spring recipes that take just a few minutes to prepare and your family and friends are sure to enjoy.
Roasted Vegetables
Grab your favorite veggies from your local farmer’s market. Wash, dry and peel (if necessary) them. Toss in olive oil, a little fresh pressed garlic, salt and pepper and pop on your grill or under the broiler until tender. If you’re a fan of balsamic vinegar you can add a little to the mixture. Under the broiler and on the grill the vinegar will carmelize.
Mediterranean Salad
For this treat you’ll need a red onion, feta cheese, kalamata olives (no pits), cucumber, tomatoes and romaine lettuce. Combine your veggies in a bowl and top with a sundried tomato vinaigrette. You can find this dressing at your local grocery store or make your own simple vinaigrette using a 1:1 ratio of red wine vinegar and olive oil.
Spring Lamb Pitas
If you love pizza and are looking for a lighter alternative as you prepare for bathing suit season then you’ll love this recipe. Zesty lemon, light cucumbers, tangy feta and tart kalamata olives all come together to create a delightful treat that’s easy to make yet sure to impress. Get the recipe here.
Strawberry Spinach Bruschetta
This is the perfect appetizer to serve at a family barbecue. It’s quick, easy and healthy. Sweet strawberries combine with savory bread and tart balsamic vinegar to create a party in your mouth. Find the entire recipe here.
Pea Herbed Goat Cheese Tarte
I don’t know about you, but nothing says spring quite like goat cheese and peas. Maybe it’s the baby animals running around on farms and crispness of the peas, but I love this combination. This easy tarte brings all of these wonderful flavors and textures together for a light appetizer or brunch item that is satisfying and light. Find the recipe here.
