One of the most satisfying things in life is sitting down to a delicious home cooked meal that includes vegetables you grew at home. There’s just something so natural about gardening and nurturing vegetables until they’re ready to enjoy. You don’t have to worry about toxic pesticides being used or wondering where your vegetables have come from.
There’s no reason why you can’t grow your own veggies at home, either in a container garden or in your backyard. Even if you lack a “green thumb” these vegetables are easy enough to grow that you’ll be whipping up a homemade salad in no time!
Bush Beans | These beans provide an earthy flavor and crunch! They’re rich in vitamins A, C, and K and are also high in fiber, iron, and folate. To grow them simply plant the seeds in well drained soil and full sun. Within weeks you’ll have a harvest that will provide delicious bush beans for the season.
Carrots | These are a favorite among children and adults. They can be used as a healthy side dish or for the less healthy, but more delicious carrot cake! They’re high in vitamin A and beta carotene. Plant them in sandy soil early in the season and wait a few weeks to enjoy your harvest!
Snap Peas | These delightful little treats are actually quite sweet and because of this often a favorite of children. They’re rich in vitamin C and fiber and are easy to take as a snack on the road, steam, or toss in a salad. Snap peas are also quite hardy and can tolerate temperatures as low as 40 degrees. They’re perfect to plan in cool wet regions and don’t fare well in heat.
Basil | Who doesn’t love this flavor packed powerhouse herb? It’s a great addition to homemade pizza; tomato, basil, mozzarella salad; and bruschetta. Plant this guy in full sun, water regularly, and watch it flourish.
Parsley | Parsley is great for digestion and packed full of flavor. It’s got a ton of vitamin A and C, will flourish in any fertile soil, and is a staple in Mediterranean cuisine.
